Ginger Cake

Ginger Cake


1 ½ cups plain flour

1 cup self raising flour

1 teaspoon bicarbonate of soda

1 teaspoons Hoyts Ground Ginger

½ teaspoon Hoyts Dutch Cinnamon

½ teaspoon Hoyts Mixed Spice

Pinch salt

1 cup sugar

2 eggs

1 cup milk

125g (4oz) butter

1 cup golden syrup


Lemon Icing

1 cup icing sugar

2 teaspoons lemon juice

2 teaspoons butter


Sift flours, soda, ginger, cinnamon, mixed spice and salt into bowl. Add sugar, beaten eggs and milk, mix well. Put butter and golden syrup into saucepan, stir over low heat until butter has melted. Stir into flour mixture, mix until well combined. Grease 20cm (8in) square tin, line with greaseproof paper. Pour cake mixture evenly into cake tin. Bake in moderate oven 1 hour to 1 ¼ hours or until cooked when tested. Leave in tin 10 minutes before turning out on wire rack to cool. When Cold top with Lemon Icing.

Lemon Icing: Sift Icing Sugar into bowl, add lemon juice and softened butter , mix well.
